am a Registered Dietitian with culinary training. Kara's Kitchen
was founded as a result
of my dietetic work with patients with kidney disease and my passion for food. I love learning about food, teaching
others about it, preparing it and eating it! Seeing the struggles commonly faced by people with chronic kidney
disease, I felt compelled to do something to enhance their enjoyment of food.
People with kidney disease are often required to follow challenging diets (e.g. low potassium, low salt, low phosphorus,
controlled protein, limited fluid consumption, etc.). The complexities of such dietary requirements can lead to
frustrations regarding what to eat and how to prepare it. The whole situation can become quite a burden.
